I have about 6 beautifully ripe bananas that are too soft to eat but way too nice to throw out. Anyone have a simple but tasty recipe they can give me for banana cake?
cheers

p.s. I could google recipes but I’d rather try something that comes with a recommendation.

I logged onto this post to see if you got recipes and you did!
FYI… you can freeze bananas and when you take them out they are like banana ice cream. Great for adding to a blender for a cool smoothie.

Oh! I didn’t know that. I usually leave bananas at room temperature coz they go black in the fridge. I do like the idea of banana icecream though. 🙂 If/when I finally get a freezer again I’ll give it a try.
Btw, apologies for not posting a pic of the banana cake. We ate it too fast. 😦

I’ll check it out in a sec but first – THANK YOU! Used that banana cake recipe this evening with the addition of a few chopped dates through the batter and some flaked almonds on top. Delicious! The Daughter is very impressed, esp. when she saw how simple the recipe was. 🙂

Sahara Sanders other books are interesting too! The cookbook is somewhat of a departure from her core topic 🙂

This is my go-to recipe which has the bonus of not requiring eggs 🙂
